Hoggy's Mac N Cheese

There was a resteraunt at Crocker Park named Hoggy's and Donna and Matt got their recipe for Mac n Cheese. This is one of the tastiest, creamiest, bestest mac n cheese! Lindsey this is for you! A couple of notes - I use all elbow macaroni it you will end up with more sauce if you do.



Hoggy’s Mac and Cheese


1/2 cups cottage cheese

2 cups elbow macaroni cooked

2 cups mostaccioli rigati cooked

1 1/2 cups sour cream

2 eggs

24 ounces cheddar cheese, coarsely shredded

salt and pepper to taste

Mix all ingredients in a large bowl. Transfer to a 13x9 inch baking pan. Bake at 375 degrees until golden and crusty, about 40 minutes



I usually stir after it has cooked for about 10 - 15 minutes then leave it alone so it gets that yummy cheesy crust on it.

You can us all elbow macaroni – measure the noodles before cooking which means 2 cups dry elbow macaroni 2 cups dry tube style noodles or 4 cups dry macaroni noodles

Savory Beef Casserole

I Love Love Love this dish. I haven't made it for years because it's not my husbands favorite ( he's not a big cream cheese, sour cream person) but everyone else in the family likes it. Tonight because there is just two of us at home I made it in two 8x8 pans instead of one 9x13 and froze one of them.
Here is a couple of notes on this recipe:
I HATE onions but this recipe is made by the flavor of the green onions. don't substitute a regular onion for the green onions it won't be nearly as delightful, I use ground turkey instead of beef and it is just as good, cut the green onions and green peppers up super small. The cheese with the onions and green peppers mingled with the noodles, turkey and sauce and it is absolutely delightful. Here we go enjoy girls!

Savory Beef Casserole
1 # ground beef or turkey
1/2 green pepper chopped fine ( fine = small pieces)
4 green onions chopped fine ( I use a little of the green along with the white part of the onion)
24 oz. Jar of Spaghetti Sauce
1 8oz. bag of wide noodles
1 C. Cottage Cheese
1 C. Sour Cream
1 8 oz. package cream cheese
Brown ground meat, stir in sauce heat through
Cook the noodles while you are browning the meat
In a medium size bowl mix Cottage Cheese, Sour Cream, Cream cheese, onion, green pepper until blended ( there may be lumps of cream cheese that is fine)
Layer in a 9x13 pan
1/2 of the noodles
cheese mixture
other 1/2 of the noodles
ground beef and sauce mixture
Bake at 325 for 35 to 40 minutes After you remove from oven let set for 5-8 minutes to set
Serves 10-12
